Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Wash zucchini and slice in half lengthwise. Drizzle cut sides with olive oil, and sprinkle with salt and pepper if desired.
- Spread marinara sauce evenly over the cut sides of the zucchini halves.
- Sprinkle shredded mozzarella cheese generously over the sauced zucchini. Add pepperoni slices or any other desired toppings.
- Place zucchini boats on a baking sheet and bake for 15-20 minutes, until cheese is melted and bubbly and zucchini is tender.
