Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.

- In another bowl, whisk together eggs, oil, and sugar.
- Gradually combine the dry ingredients with the wet ingredients and fold in the zucchini.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for a few minutes before transferring to a wire rack.
