Ingredients
Scale
- 1 lb (450g) beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: green beans, potatoes, or corn for extra texture
Instructions
- Start by gathering all your ingredients and chopping the vegetables into bite-sized pieces. This step ensures smooth cooking and easy serving.
- Heat olive oil in a large pot over medium-high heat. Add the cubed beef and sear until browned on all sides. Remove and set aside.
- Using the same pot, add chopped onion, garlic, carrots, and celery. Cook until the onions are translucent and the vegetables slightly tender, about 5 minutes.
- Return the beef to the pot. Add canned diced tomatoes, beef broth, smoked paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat to low.
- Cover the pot and let simmer for at least 2 hours or until the beef is tender and flavors are well melded. For an extra hearty version, add potatoes or green beans in the last 30 minutes.
Notes
- Ensure the beef is seared properly for maximum flavor.
- Add extra vegetables like potatoes or green beans during the last 30 minutes of simmering for added texture.
- Using fresh herbs enhances the flavor, but dried thyme works well for convenience.
- Serve hot with garnishes such as parsley or shredded cheese for a festive touch.
