Instructions

  1. Activate the yeast by combining warm milk, a teaspoon of sugar, and the yeast in a small bowl. Let sit until frothy, about 5-10 minutes.
  2. In a large mixing bowl, whisk together remaining sugar, flour, and salt. Add the activated yeast mixture, melted butter, eggs, and vanilla extract. Knead until smooth and elastic, about 8-10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm spot for 1 to 1.5 hours, until doubled in size.
  4. Prepare the filling by mixing ricotta cheese with a handful of blueberries and vanilla extract.
  5. Punch down the risen dough and divide into 12 equal portions. Roll each into a ball and flatten slightly.
  6. Spoon a tablespoon of blueberry ricotta filling into each disc. Pinch or fold the edges to seal.
  7. Place the shaped buns on a parchment-lined baking sheet, spacing evenly. Cover and let rise for another 30-45 minutes.
