Ingredients
- 2 large Granny Smith apples, peeled and diced
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2/3 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- Optional: powdered sugar for dusting
- Cooking spray or melted butter for greasing
Instructions
- Peel and dice the Granny Smith apples into small, bite-sized pieces.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the eggs, buttermilk, and vanilla extract until smooth, then pour into dry ingredients and stir until just combined.
- Gently fold in the diced apples ensuring they’re evenly coated.
- Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray or melted butter, or line with parchment paper.
- Using a tablespoon or cookie scoop, portion the batter onto the prepared baking sheet, shaping into small rounds and flattening slightly.
- Bake for 15-20 minutes, turning halfway through, until golden brown and cooked through.
- Allow to cool slightly on a wire rack. Serve warm, topped with powdered sugar or caramel drizzle, optionally with ice cream or whipped cream.
Notes
- Ensure apples are diced uniformly for even baking.
- Utensil tip: Use a cookie scoop for even-sized fritters.
- For extra flavor, add a sprinkle of cinnamon sugar before baking.
- Storing: Keep cooled fritters in an airtight container at room temperature for up to 2 days, or reheat in a 350°F oven for 10 minutes to restore crispiness.
