- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley or cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Drain and rinse chickpeas, then pat dry with a paper towel.
- In a bowl, toss chickpeas with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper.
- Spread chickpeas on a baking sheet and roast for 20-25 minutes until crispy.
- Remove from oven, squeeze fresh lemon juice over, and garnish with herbs before serving.
Notes
- You can add a pinch of cayenne for extra heat.
- Serve with rice, pita, or on a salad for a complete meal.
