Instructions
- Prepare the carrots by peeling and slicing them into thin rounds.
- In a skillet, heat the olive oil over medium heat, add garlic, and sauté for 30 seconds.
- Add the sliced red carrots and cook for 5-7 minutes until they soften.
- Stir in thyme, honey, salt, and pepper, and cook for another 2-3 minutes.
- Transfer to a serving dish and garnish with fresh parsley before serving warm.
