Instructions

  1. Heat the heavy cream and whole milk in a saucepan. Scrape vanilla seeds or add vanilla extract. Simmer gently, then remove from heat.
  2. Bloom gelatin in cold water for 5 minutes or follow gelatin package instructions.
  3. Combine the cooled cream mixture with the bloomed gelatin, stirring until dissolved. Add sugar and salt, mixing well.
  4. Pour into ramekins or molds, cover with plastic wrap, and refrigerate for at least 4 hours or overnight until set.
  5. Preheat oven to 375°F (190°C). Toss strawberries with melted butter, sugar, salt, and liquid smoke (if using). Spread on parchment-lined baking sheet.
  6. Roast for 20-25 minutes, turning once, until caramelized. Allow to cool slightly.
  7. Remove panna cotta from molds if needed. Spoon roasted strawberries over each panna cotta. Drizzle with juices or honey if desired.
