- 1 cup whole milk
- 1 vanilla bean or 2 teaspoons pure vanilla extract
- ½ cup sugar
- 2 sheets gelatin or 1 tablespoon gelatin powder

- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons unsalted butter
- 2 tablespoons sugar
- Pinch of sea salt
- Optional: a few drops of liquid smoke for smoky flavor
Instructions
- Heat the heavy cream and whole milk in a saucepan. Scrape vanilla seeds or add vanilla extract. Simmer gently, then remove from heat.
- Bloom gelatin in cold water for 5 minutes or follow gelatin package instructions.
- Combine the cooled cream mixture with the bloomed gelatin, stirring until dissolved. Add sugar and salt, mixing well.
- Pour into ramekins or molds, cover with plastic wrap, and refrigerate for at least 4 hours or overnight until set.
- Preheat oven to 375°F (190°C). Toss strawberries with melted butter, sugar, salt, and liquid smoke (if using). Spread on parchment-lined baking sheet.
- Roast for 20-25 minutes, turning once, until caramelized. Allow to cool slightly.
- Remove panna cotta from molds if needed. Spoon roasted strawberries over each panna cotta. Drizzle with juices or honey if desired.

- Chill the panna cotta thoroughly for optimal setting and presentation.
