  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 oz spaghetti or fettuccine
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • Chopped parsley for garnish (optional)
  • Red pepper flakes (optional for spice)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain, reserving about ½ cup of pasta water.
  2. Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in heavy cream and cook for 2-3 minutes until slightly thickened. Stir in grated Parmesan cheese until melted and smooth. Add reserved pasta water as needed to reach desired sauce consistency.
  4. Add cooked pasta to the skillet and toss to coat. Season with salt, black pepper, and red pepper flakes if using.
  5. Garnish with chopped parsley and serve immediately.

Notes

  • Use freshly grated Parmesan for the best melt and smooth sauce.
  • Reserve some pasta water to adjust sauce consistency if needed.
  • Can be prepared ahead by making the sauce in advance and combining with cooked pasta before serving.
