- 12 oz spaghetti or fettuccine
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- Salt and freshly ground black pepper to taste
- Chopped parsley for garnish (optional)
- Red pepper flakes (optional for spice)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta until al dente, then drain, reserving about ½ cup of pasta water.
- Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in heavy cream and cook for 2-3 minutes until slightly thickened. Stir in grated Parmesan cheese until melted and smooth. Add reserved pasta water as needed to reach desired sauce consistency.
- Add cooked pasta to the skillet and toss to coat. Season with salt, black pepper, and red pepper flakes if using.
- Garnish with chopped parsley and serve immediately.
Notes
- Use freshly grated Parmesan for the best melt and smooth sauce.
- Reserve some pasta water to adjust sauce consistency if needed.
- Can be prepared ahead by making the sauce in advance and combining with cooked pasta before serving.
