Scale
- 1 large watermelon
- 1 medium pineapple
- 1 tablespoon lime juice (optional)
- Fresh mint leaves for garnish
- Chili powder (optional, for a kick!)
Instructions
- Cut the watermelon in half lengthwise to create a bowl.
- Slice off the skin of the pineapple, removing all eyes for clean flesh.
- Cut both watermelon and pineapple into bite-sized chunks and combine them in a bowl. Add lime juice and mix gently.
- Scoop the mixture into the hollowed watermelon bowl. Garnish with mint and a sprinkle of chili powder if desired. Serve immediately.
Notes
- This dish is best enjoyed fresh, though leftovers can be stored in an airtight container for up to 2 days.
- For added visual appeal, consider using a melon baller for uniform fruit pieces.
- This recipe is vegan and can easily incorporate more fruits like mango or kiwi for variety.
