- 4-6 lamb chops (preferably bone-in for extra flavor)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon thyme leaves
- Salt and freshly ground black pepper, to taste
- Optional: lemon wedges for serving
Instructions
- Season the lamb chops generously with salt, black pepper, minced garlic, rosemary, and thyme. Drizzle with olive oil and rub the herbs into the meat.
- Preheat your oven to 425°F (220°C) and allow it to fully preheat for even cooking.
- Place the seasoned lamb chops on a baking sheet lined with parchment paper or a wire rack. Bake in the preheated oven for about 15-20 minutes, depending on thickness and desired doneness. Aim for an internal temperature of 135°F for medium rare.
- Remove the lamb chops from the oven and let them rest for 5 minutes to allow juices to redistribute.
Notes
- Use bone-in lamb chops for extra flavor, but boneless can also be used.
- For added flavor, marinate the lamb chops with herbs and oil for a few hours before baking.
- Adjust cooking time based on the thickness of the chops and preferred doneness.
