Instructions
- Pat the lamb chops dry with paper towels. In a small bowl, mix olive oil, minced garlic, salt, pepper, rosemary, and thyme. Rub this mixture generously over both sides of each lamb chop.
- Preheat the oven to 400°F (200°C). Place seasoned lamb chops on a baking sheet lined with parchment paper or a lightly greased rack.
- Bake in the preheated oven for 12–15 minutes, flipping halfway through. Use a meat thermometer to ensure an internal temperature of 145°F for medium rare or 160°F for well done.
- Remove from oven and let rest for 5 minutes to redistribute juices. Serve hot with your favorite sides.
