Instructions
- Wash the cherry tomatoes thoroughly to remove any dirt or pesticides.
- Halve the cherry tomatoes and place them in a mixing bowl. Drizzle with olive oil and toss with minced garlic, salt, and pepper.
- Preheat the oven to 400°F (200°C). Spread the tomatoes on a baking sheet and roast for 25-30 minutes until caramelized.
- Transfer the roasted tomatoes to a blender and blend until smooth, adjusting seasoning as necessary. Your sauce is now ready to serve!
Notes
- Store the sauce in an airtight container; it lasts up to one week in the fridge and three months in the freezer.
- This sauce pairs wonderfully with pasta, grilled chicken, and bruschetta.
- You can use other types of tomatoes, but cherry tomatoes are preferred for their sweetness.
- For an extra flavor kick, add herbs like oregano, thyme, or a splash of balsamic vinegar.
