Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking dish with parchment paper or non-stick spray.
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, soy sauce, honey, sesame oil, egg, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Transfer the mixture into the prepared baking dish, shaping it into a loaf form. Use a loaf pan or form by hand on a baking sheet for a uniform shape.
- Bake for about 45 minutes or until fully cooked, ensuring an internal temperature of 160°F (71°C) with a meat thermometer.
- While baking, prepare the glaze by mixing additional gochujang, honey, soy sauce, and a splash of sesame oil. Warm slightly if needed.
- Brush the glaze generously over the meatloaf and bake for an additional 10 minutes until sticky and flavorful.
- Remove from oven, rest for a few minutes, then slice and garnish with chopped green onions and sesame seeds. Serve hot with sides like creamy crockpot broccoli and cheese or crispy smashed carrots.
Notes
- For a spicier glaze, add extra gochujang or a dash of sriracha.
- You can substitute ground turkey for a leaner, lower-fat version.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
- Using a loaf pan helps achieve a neat, uniform shape, but shaping by hand works fine too.
