Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with parchment paper or non-stick spray.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, soy sauce, honey, sesame oil, egg, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Transfer the mixture into the prepared baking dish, shaping it into a loaf form. Use a loaf pan or form by hand on a baking sheet for a uniform shape.
  4. Bake for about 45 minutes or until fully cooked, ensuring an internal temperature of 160°F (71°C) with a meat thermometer.
  5. While baking, prepare the glaze by mixing additional gochujang, honey, soy sauce, and a splash of sesame oil. Warm slightly if needed.
  6. Brush the glaze generously over the meatloaf and bake for an additional 10 minutes until sticky and flavorful.
  7. Remove from oven, rest for a few minutes, then slice and garnish with chopped green onions and sesame seeds. Serve hot with sides like creamy crockpot broccoli and cheese or crispy smashed carrots.
