Ingredients
Scale
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 3 large eggs
- 2 cups chopped fresh apples (Fuji or Gala)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a large bowl.
- In a separate bowl, beat together granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract.
- Gradually combine dry ingredients with wet mixture, stirring gently until just incorporated. Fold in chopped apples carefully.
- Pour batter into the prepared cake pan. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- Prepare the Brown Sugar Icing by heating butter and brown sugar in a saucepan until it reaches a gentle boil, stirring constantly. Cool slightly before spreading over cooled cake.
Notes
- Ensure the cake is completely cool before applying the icing to prevent melting.
- You can substitute tart apples like Granny Smith for a tangier flavor.
- Adjust baking time slightly if using a different size or type of pan.
