Ingredients
Scale
- 1.5 lbs ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- Salt and pepper to taste
- 8 slices of bacon
- For the Glaze:
- 1/4 cup ketchup
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- Optional: a dash of hot sauce for extra zing
Instructions
- Preheat your oven to 375°F (190°C). In a large bowl, mix ground beef, breadcrumbs, milk, chopped onion, minced garlic, eggs, salt, and pepper until well combined.
- Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper or into a loaf pan.
- Lay bacon slices over the top of the meatloaf, overlapping slightly to ensure full coverage.
- In a small bowl, whisk together ketchup, honey, soy sauce, Worcestershire sauce, and hot sauce. Brush the glaze generously over the bacon-wrapped meatloaf.
- Bake for 50-60 minutes, basting with additional glaze midway through cooking to enhance flavor and caramelization.
- Remove from oven, let rest for 10 minutes, then slice and serve with your favorite sides like mashed potatoes or roasted vegetables.
Notes
- Use ground meat with some fat content for optimal moisture.
- Avoid overmixing the meat to keep it tender.
- Ensure bacon slices are layered tightly for a crispy exterior.
- Regularly baste with glaze for a shiny, caramelized crust.
