- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 cup unsalted butter, melted
- 2 large eggs

- 8 oz cream cheese, softened

Instructions
- Start by mixing the softened cream cheese with a little sugar and vanilla extract. Set aside.
- In a large bowl, mash the bananas until smooth. Add sugar and melted butter, then beat in eggs and vanilla until combined.
- Gradually add the dry ingredients (flour, baking soda, salt) and mix gently just until incorporated.
- Line muffin tin with paper liners. Pour a spoonful of batter into each liner.
- Add a dollop of cream cheese mixture on top of the batter in each liner.
- Cover with remaining batter to seal the cream cheese layer inside.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool on a wire rack before serving for best texture and flavor.

- For a nutty flavor, sprinkle chopped nuts on top before baking.
- You can substitute dairy-free cream cheese and butter to make this recipe vegan.
