- For Honey Pepper Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons honey
- 1 teaspoon freshly ground black pepper
- 1 teaspoon cracked black peppercorns
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 tablespoon soy sauce
- Salt to taste
- Optional: red chili flakes for extra spice
- For Creamy Macaroni Cheese:
- 200 grams elbow macaroni or pasta of choice
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream or whole milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
- 1 teaspoon Dijon mustard (optional)
Instructions
- Start by seasoning the chicken breasts with salt and freshly cracked black pepper. Coat lightly with soy sauce and marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Cook chicken for 6-8 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and sliced peppers until fragrant and tender. Add honey and red chili flakes if desired, cook for 2-3 minutes until slightly thickened.
- Return chicken to the skillet, coating with the honey pepper glaze. Simmer for 2-3 minutes to meld flavors.
- Meanwhile, cook pasta in salted boiling water until al dente. Drain and set aside.
- In a saucepan, melt butter, whisk in flour, cook for 1 minute. Gradually add cream or milk, whisking until thickened. Stir in cheeses until melted. Season with salt, pepper, and mustard.
- Add cooked pasta to the cheese sauce, stir to coat evenly. Keep warm or transfer to a baking dish if baking.
- Serve honey pepper chicken alongside cheesy macaroni, garnished with herbs if desired.
Notes
- Adjust the level of spiciness by adding more or less red chili flakes.
- For extra flavor, marinate the chicken longer or add a splash of rice vinegar to the glaze.
- To keep leftovers moist, reheat dishes with a splash of milk or additional cheese.
