Instructions
- Begin by rinsing the rice thoroughly under cold water until the water runs clear. Cook the rice according to the package instructions, typically simmering in boiling water for 15-20 minutes until fluffy. Set aside once cooked.
- While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the diced chicken with salt, pepper, chili powder, smoked paprika, and cumin. Add the chicken to the skillet and cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove from heat and set aside.
- In the same skillet, add another tablespoon of olive oil. Toss in the corn kernels and cook for 3-4 minutes until they are slightly charred and tender. For enhanced flavor, sprinkle some extra chili powder and finish with a squeeze of fresh lime juice.
- In a large serving bowl, combine the cooked rice, seasoned chicken, and charred corn. Drizzle with additional lime juice if desired. Top with crumbled cotija cheese and freshly chopped cilantro. For an extra kick, add sliced jalapeños or hot sauce on top.
