Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, combine melted butter and light brown sugar. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, and lemon juice.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually combine the dry mixture into wet ingredients until just combined.
- Fold in the chopped strawberries into the batter.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
- Let the blondies cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired, and cut into squares for serving.
