Enjoy the delightful combination of fresh strawberries and zesty lemons in these moist and chewy Strawberry Lemon Blondies. Perfect for summer gatherings or as a refreshing dessert any time of year.

  • Total Time: 45 minutes
  • Yield: 16 blondies

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 1/2 cups light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • The zest of 2 large lemons
  • 1/4 cup fresh lemon juice
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine melted butter and light brown sugar. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, and lemon juice.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually combine the dry mixture into wet ingredients until just combined.
  4. Fold in the chopped strawberries into the batter.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out with moist crumbs.
  6. Let the blondies cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired, and cut into squares for serving.

Notes

  • Store leftovers at room temperature for 2 days or refrigerate for up to 5 days.
  • Wrap tightly for freezing; will stay fresh for up to 3 months.
  • For a different flavor, use frozen strawberries, making sure to thaw and drain excess moisture.
  • Customize by adding white chocolate chips or nuts for texture.
