- 2 cups mashed potatoes
- 1 cup chopped chives
- 1 cup sour cream
- 1 cup shredded cheese (cheddar works great!)
- 1/2 cup milk
- 1/4 cup butter, melted
- Salt and pepper to taste
Instructions
- In a large bowl, mix the mashed potatoes, chopped chives, sour cream, shredded cheese, milk, and melted butter. Season with salt and pepper to taste.
- Preheat your oven to 350°F (175°C). Fill a baking dish with the creamy potato chive mixture and spread evenly. Sprinkle more cheese on top if desired.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
- Remove from the oven, let cool slightly, and serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze it for up to 3 months.
- You can reheat the bake in the microwave or oven until warmed through.
