Ingredients

  • 4 large carrots, sliced into sticks
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with 1 tablespoon olive oil, salt, and pepper. Arrange on a baking sheet.
  3. In a bowl, toss chickpeas with remaining olive oil, paprika, cayenne, salt, and pepper.
  4. Spread chickpeas on the baking sheet with carrots.
  5. Roast for 25-30 minutes until carrots are tender and chickpeas are crispy.
  6. Garnish with fresh parsley before serving.
