- 4 large carrots, sliced into sticks
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with 1 tablespoon olive oil, salt, and pepper. Arrange on a baking sheet.
- In a bowl, toss chickpeas with remaining olive oil, paprika, cayenne, salt, and pepper.
- Spread chickpeas on the baking sheet with carrots.
- Roast for 25-30 minutes until carrots are tender and chickpeas are crispy.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add a drizzle of honey or lemon juice before serving. Can be prepared vegetarian, gluten-free, and vegan-friendly.
