  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 8 oz Noodles (spaghetti, linguine, or your favorite type)
  • 1/2 cup Peanut Butter (creamy or crunchy)
  • 1/4 cup Soy Sauce
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Sesame Oil
  • 12 tablespoons Sriracha (adjust to your spice preference)
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 2 tablespoons Honey or Maple Syrup (optional, for sweetness)
  • 1/4 cup Water (to thin the sauce)
  • Toppings: chopped peanuts, sesame seeds, green onions, cilantro, red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the noodles and cook according to package directions until al dente.
  3. Once cooked, drain and rinse the noodles under cold water to stop the cooking process.
  4. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, sriracha, garlic, and ginger.
  5. Add honey or maple syrup for sweetness, if desired.
  6. Gradually add water until the sauce reaches your desired consistency.
  7. Taste and adjust seasoning as needed.
  8. Toss the cooked noodles with the spicy peanut sauce until well coated.
  9. Add toppings such as chopped peanuts, sesame seeds, green onions, and cilantro before serving.

Notes

  • For extra spice, consider adding red pepper flakes or chili oil.
  • Feel free to use different noodles like ramen or udon for variation.
  • Add lime juice for a refreshing twist.
  • Make it vegan by replacing honey with maple syrup and using gluten-free soy sauce.
