- 1 lb ground beef
- 1/2 lb ground pork (or substitute with more beef)
- 1 cup bread crumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup soy sauce
- 2 tbsp Gochujang (Korean chili paste)
- 1 tbsp honey or brown sugar
- 1 tsp sesame oil
- Salt and pepper to taste
- Optional garnish: sliced green onions, sesame seeds
- For the glaze: 2 tbsp Gochujang, 1 tbsp soy sauce, 1 tbsp honey, 1 tsp rice vinegar
Instructions
- In a large mixing bowl, combine ground beef, ground pork, bread crumbs, chopped onion, minced garlic, egg, soy sauce, Gochujang, honey, sesame oil, salt, and pepper. Mix thoroughly until well incorporated.
- Transfer the meat mixture into a loaf pan or shape into a loaf on a parchment-lined baking sheet. Preheat oven to 375°F (190°C). Bake for 45-55 minutes until internal temperature reaches 160°F (70°C).
- While baking, whisk together Gochujang, soy sauce, honey, and rice vinegar to make the glaze.
- Brush the glaze over the meatloaf during the last 10 minutes of baking to caramelize and infuse flavor.
- Remove from oven, let rest for 5 minutes, then slice. Garnish with green onions and sesame seeds if desired.
Notes
- Substitute ground turkey or chicken for a lighter version.
- Add shredded carrots or chopped bell peppers for extra nutrition and flavor.
- Reduce Gochujang for milder taste; adjust spice level as preferred.
- Serve with steamed rice, sautéed vegetables, or Asian-style salad for a complete meal.
