Instructions

  1. In a large mixing bowl, combine ground beef, ground pork, bread crumbs, chopped onion, minced garlic, egg, soy sauce, Gochujang, honey, sesame oil, salt, and pepper. Mix thoroughly until well incorporated.
  2. Transfer the meat mixture into a loaf pan or shape into a loaf on a parchment-lined baking sheet. Preheat oven to 375°F (190°C). Bake for 45-55 minutes until internal temperature reaches 160°F (70°C).
  3. While baking, whisk together Gochujang, soy sauce, honey, and rice vinegar to make the glaze.
  4. Brush the glaze over the meatloaf during the last 10 minutes of baking to caramelize and infuse flavor.
  5. Remove from oven, let rest for 5 minutes, then slice. Garnish with green onions and sesame seeds if desired.
