- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and brown chicken on both sides, then transfer to a baking dish.
- In the same skillet, sauté onions, garlic, and mushrooms until tender.
- Add chicken broth and bring to a simmer, then pour over chicken breasts.
- Add rice around the chicken in the dish.
- Cover with foil and bake for 25-30 minutes, until rice is cooked and chicken is tender.
- Garnish with fresh parsley and serve hot.
