Instructions
- Choose a cut of beef such as sirloin or chuck steak and cut into evenly-sized cubes.
- Season the beef cubes with salt, pepper, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat and sear the beef until browned on all sides, about 2-3 minutes per batch.
- Transfer seared beef to the slow cooker. Add minced garlic, butter, salt, pepper, thyme, and paprika, and stir to coat evenly.
- Set the slow cooker to low and cook for 4-6 hours, or on high for about 3 hours, until the beef is tender.
- Sprinkle with chopped fresh parsley before serving for added freshness and flavor.
