Ingredients
Scale
- 6 slices of thick bread (brioche or Texas toast work best)
- 3 large eggs
- 1/2 cup canned pumpkin puree
- 1/2 cup milk (dairy or plant-based)
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- Pinch of salt
- Butter or cooking spray for frying
Instructions
- In a mixing bowl, whisk together eggs, pumpkin puree, milk, maple syrup, vanilla, cinnamon, nutmeg, ginger, and salt until well combined.
- Dip each bread slice into the pumpkin batter, ensuring both sides are coated but not soaked.
- Heat a skillet or griddle over medium heat and add butter or spray with cooking spray.
- Cook the bread slices for 2-3 minutes per side until golden brown.
- Stack the French toast on a plate and top with whipped cream, maple syrup, or cinnamon as desired. Serve warm and enjoy the cozy fall flavors.
Notes
- Use slightly stale bread for better absorption of the batter.
- Adjust spice levels to taste for more or less heat.
- For richer flavor, add a spoonful of cream cheese or mascarpone on top.
- Prepare the batter ahead of time for quicker morning prep.
