Ingredients

- 2 lbs fresh clams
- 4 cups water
- 2 tablespoons sea salt
- 1 tablespoon olive oil
- 4 minced garlic cloves
- 1/2 teaspoon red pepper flakes
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges (for serving)
Instructions
- Rinse the clams under cold water to remove any sand or grit.
- In a large pot, add water and sea salt, and bring to a rolling boil.
- Once boiling, gently add the rinsed clams, cover, and cook for 5-7 minutes until they open.
- In a separate pan, heat olive oil and sauté garlic and red pepper flakes until fragrant. Then add diced tomatoes and spinach and stir well.
- Add the cooked clams to the vegetable mixture and combine well.
Notes
- Store leftovers in an airtight container in the refrigerator and consume within 2 days.
- Reheat gently to retain flavors before serving.
- Pair with crusty bread, pasta, or a salad for a complete meal.
