- 1 lb (450g) beef stew meat, diced
- 1 medium onion, finely chopped
- 3 carrots, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
- 1 package of pre-made puff pastry or pie dough (thawed)
- 1 egg, beaten for egg wash
- Optional: peas, potatoes, or mushrooms for extra flavor
Instructions
- In a large skillet, heat a tablespoon of oil over medium heat. Add the diced beef and cook until browned on all sides. Then, add the chopped onion, carrots, celery, and garlic. Cook until vegetables are tender. Stir in tomato paste, thyme, salt, and pepper. Pour in the beef broth and simmer for about 20 minutes until the mixture thickens. Set aside to cool slightly.
- While the filling cools, roll out the puff pastry or pie dough on a floured surface. Cut into circles using a bowl or cookie cutter approximately 4-6 inches in diameter.
- Place a spoonful of the cooled beef stew mixture into the center of each pastry circle. Brush the edges with beaten egg, then fold the dough over to form a half-moon shape. Seal the edges by pressing with a fork. Brush the tops of the pies with more beaten egg for a golden finish.
- Arrange the assembled pies on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown. Let cool slightly before serving.

- For a vegetarian version, substitute beef with hearty vegetables like mushrooms, lentils, or extra vegetables such as potatoes and peas.
- Ensure the filling is cooled before assembling for easier handling.
- You can prepare and freeze the unbaked or baked pies for future meals.
