Instructions
- Start by combining the flour, sugar, and salt in a large mixing bowl. Add the cold, cubed butter and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit your pie dish. Transfer to the dish, trim excess dough, and prick the bottom with a fork. Cover with parchment paper and fill with pie weights or dried beans. Bake for about 15 minutes, then remove the weights and paper and bake an additional 10 minutes until golden. Let it cool slightly.
- In a large bowl, whisk together honey, eggs, heavy cream, and vanilla extract until smooth. Pour this filling into the pre-baked pie crust.
- Bake in the preheated oven at 375°F (190°C) for 25-30 minutes, or until the filling is set and slightly golden around the edges. Remove from the oven and immediately sprinkle the top with coarse sea salt.
- Allow the pie to cool to room temperature, then refrigerate for at least 2 hours. Slice and serve with fresh fruit or whipped cream for an unforgettable dessert.
