Instructions
- Preheat your oven to 400ยฐF (200ยฐC). Wash and trim the radishes, cutting large ones in half.
- Drizzle olive oil over the radishes, season with salt and pepper, and toss to coat.
- Spread radishes in a single layer on a baking sheet and roast for 15-20 minutes until tender and slightly browned.
- While radishes are roasting, combine mixed greens in a large bowl. Once radishes are cooled, add them to the greens.
- Drizzle balsamic vinegar over the salad and sprinkle with feta cheese and pumpkin seeds if desired. Toss gently to combine.
