- 4 large ripe tomatoes, sliced

Instructions
- Preheat your oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and bake for 30-40 minutes until cloves are soft.
- Roll out the puff pastry to a 12-inch square and transfer it to a tart pan. Prick the pastry base to prevent puffing.
- Mix roasted garlic, heavy cream, Parmesan cheese, thyme, salt, and pepper in a bowl. Spread this mixture over the pastry base and arrange tomato slices on top.
- Bake for 20-25 minutes, or until the pastry is golden brown and the tomatoes are tender. Garnish with fresh basil before serving.
