- 2 pounds ripe tomatoes, such as Roma or San Marzano
- 1 head of garlic
- 1/4 cup olive oil, plus extra for drizzling
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)

- 1/4 cup fresh basil leaves, chopped
Instructions
- Preheat your oven to 400ยฐF (200ยฐC). Wash and halve the tomatoes. Slice the top off the garlic head.
- Drizzle tomatoes and garlic with olive oil, sprinkle with oregano, red pepper flakes, salt, and pepper. Roast for 45-50 minutes.
- Let roasted tomatoes and garlic cool slightly. Squeeze garlic cloves into a pot, add tomatoes, and blend until smooth.
- Place pot over medium heat, add remaining olive oil, and simmer for 15-20 minutes. Adjust seasoning and add fresh basil before serving.
