  • 2 pounds ripe tomatoes, such as Roma or San Marzano
  • 1 head of garlic
  • 1/4 cup olive oil, plus extra for drizzling
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Wash and halve the tomatoes. Slice the top off the garlic head.
  2. Drizzle tomatoes and garlic with olive oil, sprinkle with oregano, red pepper flakes, salt, and pepper. Roast for 45-50 minutes.
  3. Let roasted tomatoes and garlic cool slightly. Squeeze garlic cloves into a pot, add tomatoes, and blend until smooth.
  4. Place pot over medium heat, add remaining olive oil, and simmer for 15-20 minutes. Adjust seasoning and add fresh basil before serving.
