Instructions
- Preheat your oven to 400°F (200°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and golden. Let cool, then squeeze the garlic into a bowl.
- In a medium bowl, combine diced tomatoes, chopped basil, and roasted garlic. Mix gently to distribute the garlic evenly.
- Drizzle olive oil and balsamic vinegar over the tomato mixture. Season with salt and pepper, stir gently, and let sit for 15 minutes to meld flavors.
- Preheat your grill or broiler. Brush baguette slices with olive oil and toast until golden brown. Spoon the roasted garlic tomato mixture over each slice and serve immediately.
