  • 3 large bell peppers (red, yellow, and green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by slicing the bell peppers and onion into strips. Mince the garlic and set aside. Remove the sausage casings if using links and crumble the sausage.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Add remaining olive oil to the same skillet. Add sliced peppers, onions, and garlic. Season with oregano, smoked paprika, salt, and pepper. Cook for 5-7 minutes until tender and slightly caramelized.
  4. Return the sausage to the skillet. Stir everything together and cook for another 2-3 minutes to meld flavors. Garnish with parsley if desired. Serve hot with bread or over rice.
