- 1 pound of Italian sausage links or bulk sausage
- 3 large bell peppers (red, yellow, and green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by slicing the bell peppers and onion into strips. Mince the garlic and set aside. Remove the sausage casings if using links and crumble the sausage.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- Add remaining olive oil to the same skillet. Add sliced peppers, onions, and garlic. Season with oregano, smoked paprika, salt, and pepper. Cook for 5-7 minutes until tender and slightly caramelized.
- Return the sausage to the skillet. Stir everything together and cook for another 2-3 minutes to meld flavors. Garnish with parsley if desired. Serve hot with bread or over rice.

- Use different types of sausage (chicken, turkey) for variety.
- For extra flavor, add a splash of balsamic vinegar or hot sauce.
- This dish can be made ahead and reheated easily.
