- 3 ripe bananas, mashed
- 1 cup sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1/2 cup canned pumpkin (optional for extra pumpkin flavor)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray and set aside.
- In a large mixing bowl, combine the mashed bananas, sugar, melted butter, eggs, vanilla extract, and canned pumpkin if using. Whisk until smooth.
- In a separate bowl, mix together the flour, baking soda, salt, and pumpkin pie spice.
- Add the dry ingredients gradually to the wet mixture, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
Notes
- For extra flavor, fold in chopped walnuts or pecans before baking.
- Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to 1 week.
- To freeze, wrap slices tightly in plastic wrap and freeze for up to 3 months.
