- 2 cups fresh pineapple, diced
- ½ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- Juice of 1 lime
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp honey (optional for extra sweetness)
Instructions
- Start by peeling and coring a fresh pineapple. Dice it into small, bite-sized pieces.
- In a large mixing bowl, add the diced pineapple, finely chopped red onion, and freshly chopped cilantro.
- Squeeze the juice of one lime over the mixture and season with salt and black pepper. Add honey if desired.
- Carefully stir in the minced jalapeño, mix well, then refrigerate for at least 30 minutes before serving.
Notes
- For extra sweetness, add diced mango or a touch more honey.
- Adjust spiciness by adding more or less jalapeño.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
