Instructions
- In a large bowl, whisk together flour, sugar, and salt to combine.
- Add cold, cubed butter and blend with a pastry cutter or forks until mixture resembles coarse crumbs.
- Gradually add ice-cold water, one tablespoon at a time, mixing until the dough forms a ball. Flatten into a disk, wrap, and refrigerate for at least 30 minutes.
- Toss sliced peaches with honey or maple syrup and vanilla extract in a bowl to prepare the filling.
- On a floured surface, roll chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
- Spread the peach filling in the center, leaving about 2 inches around the edges. Overlap slices slightly for fullness.
- Fold the dough edges over the peaches, pleating as needed. Brush with beaten egg and sprinkle with coarse sugar if desired.
- Preheat oven to 400Β°F (200Β°C). Bake the galette for 35-40 minutes until crust is golden and peaches are tender.
- Allow to cool for at least 10 minutes before serving warm or at room temperature. Serve with whipped cream or vanilla ice cream for extra indulgence.
