This easy-to-make fruit tart combines simple ingredients with impressive results, offering a charming presentation and incredible flavor in every slice.

  • Total Time: 1 hour
  • Yield: 8 slices 1x

Ingredients

Scale
  • 1 Β½ cups all-purpose flour
  • ΒΌ cup granulated sugar
  • Β½ teaspoon salt
  • Β½ cup unsalted butter, cold and cubed
  • 4–5 ripe peaches, sliced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkle)

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt to combine.
  2. Add cold, cubed butter and blend with a pastry cutter or forks until mixture resembles coarse crumbs.
  3. Gradually add ice-cold water, one tablespoon at a time, mixing until the dough forms a ball. Flatten into a disk, wrap, and refrigerate for at least 30 minutes.
  4. Toss sliced peaches with honey or maple syrup and vanilla extract in a bowl to prepare the filling.
  5. On a floured surface, roll chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  6. Spread the peach filling in the center, leaving about 2 inches around the edges. Overlap slices slightly for fullness.
  7. Fold the dough edges over the peaches, pleating as needed. Brush with beaten egg and sprinkle with coarse sugar if desired.
  8. Preheat oven to 400Β°F (200Β°C). Bake the galette for 35-40 minutes until crust is golden and peaches are tender.
  9. Allow to cool for at least 10 minutes before serving warm or at room temperature. Serve with whipped cream or vanilla ice cream for extra indulgence.

Notes

  • Chill the dough thoroughly for crispiness and easier handling.
  • Use ripe peaches for the best flavor and juiciness.
  • Adjust baking time if using different fruit varieties or slices thickness.
  • For a vegan version, substitute butter with coconut oil or vegan butter.
