- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced

Instructions
- Start by chopping the potatoes into bite-sized pieces. Slice the sausages, and chop the onion, bell pepper, and garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the sliced sausages until browned, about 5-7 minutes. Remove and set aside.
- Add another tablespoon of olive oil if needed. Toss in the diced potatoes, season with salt, pepper, smoked paprika, and thyme. Cook until crispy and tender, approximately 10-12 minutes.
- Add chopped onion, bell pepper, and minced garlic. Sauté until fragrant, about 3-4 minutes. Return sausages to the skillet and cook for another 2-3 minutes to meld flavors.
- Finish by sprinkling chopped parsley on top. Serve hot for a quick and satisfying meal.
