Mini Meatloaf Muffins are perfectly portioned, delicious bites ideal for busy weeknights, parties, or meal prep. These savory, moist muffins provide a hearty and flavorful alternative to traditional meatloaf, making them a versatile addition to any meal plan.

  • Total Time: 30-35 minutes
  • Yield: 12 mini muffins

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1/2 cup bread crumbs (or crushed oats for a healthier option)
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • Ketchup or BBQ sauce for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the ground meat, bread crumbs, milk, chopped onion, egg, minced garlic, Worcestershire sauce, salt, pepper, and herbs. Mix until well incorporated but avoid overmixing.
  2. Lightly grease a muffin tin or line with paper liners. Using a cookie scoop or your hands, evenly portion the meat mixture into the muffin cups, pressing lightly to shape into mini loaves.
  3. Bake in the oven for 20-25 minutes or until the internal temperature reaches 160°F (71°C). During the last 5 minutes, brush with ketchup or BBQ sauce if desired.
  4. Let the muffins rest for a few minutes before removing from the tin. Serve warm, garnished with herbs or vegetables of choice.

Notes

  • For low-carb options, substitute bread crumbs with almond flour or crushed pork rinds.
  • Adding chopped herbs or shredded cheese can enhance flavor.
  • Use a cookie scoop for evenly sized muffins.
