Instructions
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, beat egg whites on medium speed until soft peaks form. Gradually add the superfine sugar while beating until stiff, glossy peaks appear. Mix in vanilla extract and vinegar or lemon juice.
- Transfer the meringue into a piping bag fitted with a round tip. Pipe small mushroom caps, about 1-2 inches in diameter, and pipe small stems underneath each cap.
- Bake the meringues for 1.5 to 2 hours until crisp and dry. Turn off the oven and let them cool completely inside.
- Once cooled, melt chocolate chips and dip the tags and caps to create a realistic mushroom appearance. Let the chocolate set before serving.
