Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- ½ cup butterscotch chips, melted
- 1/4 cup butterscotch syrup (for swirl)
- 1 teaspoon cinnamon (optional)
Instructions
- Combine graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan to form the crust. Bake at 325°F (163°C) for 10 minutes, then cool.
- Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
- Divide the batter into two halves. Mix melted butterscotch chips into one half thoroughly. Fold butterscotch syrup into the other half to create a swirl effect.
- Pour plain batter into the crust. Add the butterscotch batter on top. Use a skewer or knife to swirl the two batters, creating a marbled pattern.
- Bake at 325°F (163°C) for 50–60 minutes until edges are set but center slightly jiggles. Cool inside the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
Notes
- Ensure the cream cheese is softened for smooth mixing.
- For a more intense butterscotch flavor, add extra chips or syrup.
- Swirling with a skewer creates a beautiful marbled effect, but be gentle to maintain layers.
