Instructions
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a large mixing bowl, beat the softened butter and brown sugar until creamy. Add the egg and vanilla extract, mixing well. Gradually incorporate the dry ingredients until a dough forms. Fold in the butterscotch chips.
- Preheat oven to 350°F (175°C). Scoop tablespoon-sized dough portions into balls and place on a lined baking sheet. Flatten slightly and bake for 10-12 minutes until edges are golden. Cool completely on wire racks.
- In a mixing bowl, beat the heavy cream and melted butter until smooth. Gradually add confectioners’ sugar and beat until fluffy. Chill if desired.
- Spread a generous layer of filling on the flat side of one cookie, then top with another to form a sandwich. Decorate with edible gold dust or sprinkles as desired.
