Instructions
- Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes, until crispy.
- In a skillet, cook ground beef until browned; add taco seasoning and cook according to package instructions.
- Once potatoes are ready, serve in bowls topped with seasoned beef, shredded cheese, diced tomatoes, green onions, and sour cream.
