Instructions
- Combine graham cracker crumbs and sugar in a bowl. Pour in melted butter and stir until well incorporated.
- Press the mixture firmly into a 9-inch pie dish, using the bottom of a glass to create an even crust.
- Chill the crust in the refrigerator for at least 30 minutes to set.
- In a mixing bowl, whisk egg yolks until smooth. Gradually stir in sweetened condensed milk, mixing constantly.
- Stir in lime juice and lime zest to the mixture.
- Pour the lime filling into the chilled graham cracker crust and smooth the top.
- Preheat oven to 350°F (175°C). Bake the pie for 10-12 minutes until the filling is set but still slightly quivery in the center.
- Allow the pie to cool at room temperature for 1 hour, then refrigerate for at least 3 hours or until thoroughly chilled.
- Top with whipped cream and garnish with lime slices or zest before serving.
