  • 4 large flour tortillas
  • 1 package of Jimmy Dean sausage (or your choice of breakfast sausage)
  • 1 cup diced bell peppers
  • 1 small onion, diced
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Salsa, for serving (optional)

Instructions

  1. In a skillet over medium heat, cook the Jimmy Dean sausage until browned. Add the diced bell peppers and onion, continuing to sauté until they are tender.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the sausage and vegetables, scrambling until just cooked through.
  3. Take the flour tortillas and spoon the sausage, vegetable, and egg mixture into the center of each tortilla. Sprinkle shredded cheese on top for an extra kick.
  4. Carefully roll each tortilla, tucking in the sides as you go, to create a sealed burrito. Repeat until all the filling is used up!

Notes

  • If you have leftovers, store the burrito in an airtight container in the fridge for up to 3 days. Reheat in the microwave or skillet until warm.
  • Can be prepared ahead of time by storing the filling in the refrigerator and assembling the burritos in the morning.
  • Substitutes for sausage include turkey sausage, tofu, or bacon. For a vegetarian option, simply omit the sausage and add extra veggies or black beans.
