- 4 large flour tortillas
- 1 package of Jimmy Dean sausage (or your choice of breakfast sausage)
- 1 cup diced bell peppers
- 1 small onion, diced
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- Salt and pepper, to taste
- Salsa, for serving (optional)
Instructions
- In a skillet over medium heat, cook the Jimmy Dean sausage until browned. Add the diced bell peppers and onion, continuing to sauté until they are tender.
- In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the sausage and vegetables, scrambling until just cooked through.
- Take the flour tortillas and spoon the sausage, vegetable, and egg mixture into the center of each tortilla. Sprinkle shredded cheese on top for an extra kick.
- Carefully roll each tortilla, tucking in the sides as you go, to create a sealed burrito. Repeat until all the filling is used up!
Notes
- If you have leftovers, store the burrito in an airtight container in the fridge for up to 3 days. Reheat in the microwave or skillet until warm.
- Can be prepared ahead of time by storing the filling in the refrigerator and assembling the burritos in the morning.
- Substitutes for sausage include turkey sausage, tofu, or bacon. For a vegetarian option, simply omit the sausage and add extra veggies or black beans.
