- 3 large eggs
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup fruit preserves or jam (strawberry, raspberry, or any of your choice)
- Powdered sugar for dusting
Instructions
- In a large bowl, beat the eggs and granulated sugar together until thick and pale. Then sift together flour, baking powder, and salt, and gently fold this mixture into the egg mixture. Incorporate milk and vanilla extract until combined.
- Pour the batter evenly into a greased and lined baking pan. Bake in a preheated oven at 375°F (190°C) for about 12-15 minutes, or until the cake is golden and springs back when touched.
- Once baked, remove the cake from the oven and let it cool for a few minutes. Carefully turn the cake out onto a clean kitchen towel sprinkled with powdered sugar. Peel off the parchment paper and gently roll the cake using the towel starting at one end.
- Unroll the cake gently and spread a layer of fruit preserves evenly over the surface. Roll the cake back up tightly without the towel, seam-side down on a serving platter, and dust with powdered sugar before slicing and serving.

- You can freeze the rolled cake without filling for longer storage; thaw in the refrigerator and add filling before serving.
