Instructions

  1. In a mixing bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt. Toss gently until evenly coated.
  2. Combine the flour and a pinch of salt in a large mixing bowl. Add the cold, cubed butter and blend until it resembles coarse crumbs. Mix in the vanilla extract and add cold water until dough forms.
  3. Roll out two-thirds of the dough into a circle and place it in a greased 9-inch pie dish. Add the apple filling and cover with remaining dough, sealing edges.
  4. Beat the egg and brush over the top crust. Bake in a preheated oven at 375°F (190°C) for 45-50 minutes until golden brown.
  5. Allow to cool slightly before serving, potentially with vanilla ice cream or whipped cream.
