  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • ½ cup sliced black olives
  • ½ cup sliced pepperoni or cooked ham strips (optional)
  • ½ cup chopped fresh basil or Italian parsley
  • ¼ cup grated Parmesan cheese
  • ¼ cup red onion, finely chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar or red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process and cool the pasta. Set aside.
  2. In a large mixing bowl, combine the cherry tomatoes, mozzarella balls, black olives, red onion, and chopped herbs. Add sliced pepperoni or ham if using.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
  4. Add the cooled tortellini to the vegetable mixture. Pour the dressing over the salad and toss gently until evenly coated.
