- 1 package of refrigerated or frozen tortellini (cheese or your preferred flavor)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- ½ cup sliced black olives
- ½ cup sliced pepperoni or cooked ham strips (optional)
- ½ cup chopped fresh basil or Italian parsley
- ¼ cup grated Parmesan cheese
- ¼ cup red onion, finely chopped
- ¼ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar or red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process and cool the pasta. Set aside.
- In a large mixing bowl, combine the cherry tomatoes, mozzarella balls, black olives, red onion, and chopped herbs. Add sliced pepperoni or ham if using.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
- Add the cooled tortellini to the vegetable mixture. Pour the dressing over the salad and toss gently until evenly coated.
Notes
- For best flavor, prepare the salad at least 30 minutes in advance to allow flavors to meld.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Adjust the amount of herbs and cheese according to your taste preferences.
