- 2 large chicken breasts
- 2 tbsp honey
- 3 tbsp lime juice
- 1 tsp lime zest
- 1 cup jasmine rice
- 1 ripe avocado, mashed
- 1/4 cup chopped cilantro
- 1/2 cup diced tomatoes
- Salt and pepper to taste
Instructions
- Cook jasmine rice according to package instructions.
- While rice cooks, marinate chicken breasts with honey, lime juice, lime zest, salt, and pepper for 10 minutes.
- Grill chicken until cooked through and slightly charred.
- Mix cooked rice with mashed avocado and chopped cilantro.
- Layer avocado rice in each serving plate, slice grilled chicken and place on top.
- Garnish with diced tomatoes, lime wedges, and extra cilantro.
- Serve immediately with a fresh lime slice for added flavor.

- For extra flavor, marinate chicken longer or add a pinch of chili flakes.
- Use ripe avocados for creamier rice.
